I know chicken breast is supposed to be healthy for you, but I really don’t like it — at all! To me, it is always bland, a tad bit dry, and just not that tasty, kind of how I think healthy food is supposed to taste.
That is UNTIL I figured out this balsamic fig sauce recipe. I’ve gone from hating chicken breast to devouring it. Yes, it is because of the sauce — it hides the chicken breast flavor a bit 🙂
Variations:
- Swap out the fig jam for cherry jam — great on beef or pork.
- Add red wine instead of chicken stock for a more complex flavor.
- Swap out chicken stock with white wine when using fig jam.
- Tastes great on pork tenderloin as well as chicken.
Fig jam is not readily available in our local grocery store, so I often purchase Stonewall Kitchen Organic Fig Jam from Amazon for sheer convenience. Costco will carry large jars at a great price in the Fall, but it isn’t there very long so you have to be on the lookout for it.
